Nicolas Maillart Platine 1er cru. 57% Pinot Noir, 28% Chardonnay und 15% Meunier. Eine Assemblage aus 2017, 2016, 2015 und 2014. Dosage 3,5 g/ Degorgiert 11/2020.

Spontanvergärung, 55% in ziemlich neuen Fässern, Elevage nach 6 Monaten, keine Malolaktik. Der Platine hat eine schöne Bernsteinfarbe, eine komplexe Nase, Pilze, ungesüßte Ananas, im Abgang ist er offen, eine verblüffende Single Malt ähnliche Nase. Dies ist ein sehr sauberer Champagner-Stil, die für eine solche Mischung verschiedener Jahrgänge typische Aromatik kommt und geht. Zeitweise Ananas, Butterscotch, das einen salzigen Touch hat, Verveine, grüne Äpfel, austernschalenartige Salzigkeit. Für einen Einsteiger-Champagner sehr gut, die Maillard-Reaktion beginnt zu wirken, was leichte Umami-Noten bringt. Er hat das kalte aromatische Gefühl der Champagner aus dem Norden, aber echte Substanz. Das Holz ist da, aber durch das Fehlen der Malolaktik ist er nicht vorherrschend. Lange Zeit habe ich aufgrund von Maillarts Produktionsmengen und einer nicht so beeindruckenden Vorstellung bei einer Fachverkostung Maillart gemieden, was ein Fehler war. Eine große Produktion hat den Vorteil, dass die Kosten niedriger sind, oder anders gesagt, der Preis eines Champagners spiegelt nicht unbedingt seine Qualität wider.

 Spontaneous fermentation, 55% in fairly new barrels, elevage after 6 months, no malolactic. The Platine has a beautiful bernstein colour, a complex nose, mushrooms, unsweetened pineapples, the longet it is open a perplexing single malt like nose. This is a very clean style of champagne, the aromatics typical for such a mixture of different vintages come and go. At times pineapple, butterscotch which has a salty touch, verviene, green apples, oyster shell like salinity. For an entry level champagne very good, the Maillard reaction is starting to kick in which brings light umami notes. This has the cold aromatic feel of the champagnes from the north but real substance. The wood is there but through lack of the malolactic is not predominant. For a long time due to Maillarts production levels and a not so impressive showing at a trade tasting I long avoided Maillart which was a mistake. Big production has the advantage of lower costs or on other words the price of a champagne does not necessarily reflect its quality.
