Die Trauben für Blance de Castille stammen aus 2 Premier Cru Lagen Vertus und Bergères-lès-Vertus. Der Champagner besteht aus 60% Wein aus dem "Solera"-System und 40% aus dem aktuellen Jahrgang. Colin verwendet weder Holz noch wird der Champagner der malolaktischen Gärung unterzogen, was zu einem frischeren und fruchtbetonten Stil des Blanc de Blancs führt. Der Blanche de Castille kann zu Fisch oder Krustentieren serviert werden, roh oder leicht gegart; zu Hähnchen in Sahnesauce mit Pilzen oder Brie de Meaux.

The grapes for Blance de Castille derive from 2 Premier Cru sites Vertus and Bergères-lès-Vertus. The champagne is made up of  60% wine from the "Solera" system and 40% from current vintage. Colin does not use wood nor does the champagne undergo the malolactic fermentation, this results in a fresher and more fruit driven style of Blanc de Blancs. The Blanche de Castille can be served with fish or shellfish raw or lightly cooked; chicken in creamsauce with mushrooms or Brie de Meaux.
